As a vegetarian in a family of Mississippi Delta born-and-raised meat eaters, Heather Ries says cooking dinner for her family can be challenging at times.

“I am always trying to come up with veggie options that we can all enjoy, but that might double as my entree so I’m not cooking several different meals at night after cooking all day,” said Ries, the chef and owner of Mrs. Hippie Eats, a prepared foods shop in Hernando, Mississippi.
